Community Kitchen Demo: Reducing Waste While Eating Clean

Cooking healthy meals as a college student with a busy schedule can be difficult. Often times, the most cooking students do is microwaving some ramen or Easy Mac. That’s why we brought in two of our amazing chefs from Meliora Catering for our Minimal Waste from Hillside kitchen demonstration. They showed us how to make a quick, easy, healthy, and delicious meal from ingredients that can all be found at Hillside.

They showed us how to make a “power bowl” with a quinoa/wild rice blend, spinach, green beans, peppers, spinach, a choice of salmon or tofu, and a soy sauce-ginger glaze. For dessert, we had a strawberry-banana smoothie with fresh berries and whipped cream. Yum!

All of these ingredients can be found at Hillside and the dish is super easy to prepare in less than 30 minutes. For example, the rice/quinoa blend is microwaveable! Anyone can make it, even the most inexperienced cooks (like me).

Another great thing is that the chefs made sure that most of the ingredients were either zero-waste or had recyclable packaging. Even the cups for the smoothies were compostable. This meal was not only healthy but also good for the environment.

I had a great time at this event, ate some delicious food, and even took home some leftovers for lunch the next day. And I know I will be re-creating their recipe for a quick, healthy dinner on those busy days.
